Preston's Steakhouse

Located just minutes from the popular Big South Fork National River and Recreation area in Oneida, Tennessee is Preston’s Steakhouse, a popular tourist attraction in itself. Hungry travelers and locals have frequented this rustic southwestern-themed eatery since 1992, where a real campfire is kept burning in the kitchen for that bold hickory flavor of the sizzlin’ hand cut steaks, tender ribs and chicken fajitas they have become famous for.

Owner Chris Stephens brought the Tex-Mex flair, along with many of the rustic southwest décor pieces to this area from his native Texas hill country after his market research gave positive indications for success. The research has not let him down. After a major remodel in 2001 that doubled the size of the restaurant, he is now exploring additional locations and looking to expand his catering operation.

His relationship with PERFORMANCE Foodservice began at inception when he and his distributor rep, John Prather, put together a plan which included using only top quality products and ingredients. Chris feels that attentive customer service is another attribute to his success.  “Low turnover and proper training are the keys,” he remarked, “we hire attitude and train skills.”  But consistency is at the top of the list.  “Being consistent is the best, but hardest, thing to do,” Chris says. “Over the years it has really paid off for us.”

His business has grown by leaps and bounds during the 18 years with the help and advice of his trusted sales consultant with PERFORMANCE Foodservice - Somerset, which has remained the primary supplier throughout.  “ I think one of the greatest things he ever did was to add a POS system several years ago which eliminated various mistakes and improved his speed of service,” John suggested and Chris agreed. Also, the system allows for regular evaluation of the menu mix and gives a clear inventory picture.
