Vodka Steamed Mussels in Tomato Cream


  • 1 1/2 oz LAND O LAKES Unsalted Butter
  • 1 tbsp Peak Fresh Produce garlic, clove(s) (chopped)
  • 1 lb Empire’s Treasure Black Mussels
  • 1 oz Vodka
  • 2 oz Roma marinara sauce
  • 1 each Peak Fresh Produce lettuce, leaf
  • 2 each Peak Fresh Produce lemon(s)
  • 2 slices Heritage Ovens roll(s), ciabatta (toasted)
  • 2 oz cream reduction


Heat 1 oz butter in a small sauté pan. Butter both sides of two pieces of thick sliced ciabatta with remaining butter and place on the grill to toast. Add garlic to sauté pan and briefly sauté. Add mussel pack and toss. Add vodka and continue to sauté. Add marinara sauce and cream reduction to sauté pan and toss to combine flavors. Line one edge of a large pasta bowl with leaf lettuce. Place mussels in a large pasta bowl. Cover with remaining sauce. Insert two pieces of ciabatta into mussels, garnish with lemon wedges and serve immediately.
