1 QT ORANGE JUICE
2 ONIONS (DICED)
2 TBL GARLIC (MINCED)
8-10 ANCHO CHILIES
½ BUNCH CILANTRO
¼ C SUGAR
1 TBL SALT
1 TBL BLACK PEPPER
2 TBL OIL
IN A ½ GALLON SAUCE PAN ADD OIL OVER MEDIUM HEAT. NOW ADD GARLIC, ONION, SALT & PEPPER COOK FOR 1-2 MINUTES. ADD ORANGE JUICE, ANCHO PEPPERS, CILANTRO & SUGAR AND ALLOW TO SIMMER FOR 40-45 MINUTES UNITL PEPPERS SOFTEN. TRANSFER MIXTURE TO A BLENDER OR FOOD PROCESSOR AND PUREE THEN STRAIN AND SERVE.
