Brandy Peppercorn Sauce

 

Ingredients

Yields 1 cup

2 c – heavy whipping cream
1 tsp beef base
1 tsp garlic minced
½ c brandy
1 ½ tsp fresh rosemary (minced)
1/8 tsp salt
½ tsp black peppercorns (coarse grind)
1 tsp grated parmesan cheese
1 tsp oil

 

Instructions

In a sauce pan add oil over medium high heat.  Add garlic and cook for 1 minute then add brandy and flame to reduce by ½ .  Now add rosemary, salt, peppercorns and heavy cream.  Cook for 1 minutes then whisk in beef base and reduce by ½ .  Now add parmesan cheese and serve.
