8 inch po boy bread
½ lb squid (fried)
2 Roma tomatoes (sliced)
1 c baby greens (tossed in lemon vinaigrette)
1 tbl caviar
¼ c black olive mayo

1 large egg yolk
½ tsp dijon mustard
½ tsp garlic (minced)
2 tbl calamata olives (pitted)
¾ c extra virgin olive oil
1 tbl white wine vinegar
1/8 tsp blackpepper
Spread bread with black olive mayo. Now add baby greens to bread then tomato slices and then fried squid. Drizzle with caviar and serve.
Black Olive Mayo
In a blender add garlic, pepper, olives, mustard, vinegar and dijon mustard then puree. With blender running slowly drizzle in olive oil.
