2 lb sweet potatoes
5oz light brown sugar
2 fl oz water
2 oz unsalted butter
1 tsp vanilla extract
Peel sweet potatoes then cut into ¼ inch thick slices. Bake the potatoes on a sheet pan in a pre-heated 350 degree oven for 30 minutes. Combine the sugar, water and butter and bring to a boil. Add the vanilla extract and remove from the heat. Place the potatoes in a casserole dish then pour the sugar mixture over the top and bake for 20 minutes at 350 degrees.
