Yields 1 quart
1 – bag fresh cranberries
2 c orange juice
1 c sugar
¼ c red onion (diced)
1 ½ tsp garlic minced
2 tbl fresh basil (minced)
1 ½ c merlot wine
2 tbl oil
1/8 tsp salt
½ tsp blackpepper
In a sauce pan over medium high heat add oil. Now add onion, garlic, salt & pepper and cook for 1-2 minutes. Now add merlot and reduce by ½ . Add cranberries, orange juice, sugar and basil and simmer for 10-15 minutes. (Until cranberries skin starts to split.) Transfer mixture to food processor and puree then strain and serve.
