5 – 50 ct mealy potatoes (russet)
1 qt vegetable oil
Cut potatoes ¼ inch thick for cottage fries / 1/8 inch thick 1-2 inches long for shoestring / 3/8 inch thick by 3 inches long for standard French fry / four large wedges for steak fries. Cook potatoes in 250 degree oil for 2-3 minutes until lightly brown. Remove and drain. When service time arrives heat oil to 350 degrees then cook potatoes to order in oil until golden brown.
