8 slices of multi grain bread
8 tbl goat cheese
1 c celery cut on bias
2 c watercress (stems removed)
1 avacado (sliced)
4 tbl walnut pesto
4 tbl lemon vinaigrette
Spread goat cheese on 4 slices of bread. In a bowl toss the celery with the vinaigrette and place on top of goat cheese. Add watercress to bowl with vinaigrette and toss then place on top of celery. Place avacado slices on top of watercress then spread walnut pesto on other 4 slices of bread and close sandwiches and slice then serve.
