Grilled Mahi-Mahi with Ancho Chili Jam

Ingredients

4 – 8OZ MAHI MAHI FILETS
4 ANCHO CHILIES
2 C ORANGE JUICE
½ C SUGAR
3 GARLIC CLOVES
1 ONION (SLICED)
1 TSP SALT
1 TSP BLACK PEPPER
2 TBL CILANTRO
2 TBL OIL

Instructions

GRILL MAHI MAHI UNTIL DONE THEN RESERVE.  IN A POT OVER MEDIUM HEAT ADD OIL.  NOW ADD GARLIC, ONIONS, SALT, PEPPER, CILANTRO AND CHILI PEPPERS AND COOK FOR 1-2 MINUTES.  NOW ADD ORANGE JUICE AND SUGAR AND SIMMER FOR 30 MNUTES.  NOW PUT MIXTURE INTO FOOD PROCESSOR AND PUREE THEN STRAIN AND SERVE ON TOP OF FISH.
