Hot Sausage with Pickled Fennel and Ricotta

 

Servings: 4

Ingredients

4 hot sausage patties
4 ciabatta rolls (sliced)
8 oz ricotta cheese
1 c fennel (julienne)
2 tbl extra virgin olive oil
1 tsp balsamic vinegar
1 tsp basil (minced)
1 tsp honey
Salt and Pepper to taste

Instructions

In a bowl add fennel, balsamic vinegar, honey, basil, salt, pepper & olive oil then mix and allow to rest overnight.  Cook hot sausage.  Spread rolls with ricotta cheese then top with hit sausage and pickled fennel then serve.
