2 slices Texas Toast (toasted)
1 lobster tail (boiled and chopped)
½ c jicama (juilenne)
½ c fennel (juilenne)
½ tsp tarragon (minced)
2 tbl green onion (chopped)
2 tbl extra virgin olive oil
1 tsp cider vinegar
Salt & black pepper
1 tbl mayo
Combine jicama, fennel, green onion, taragon, salt, pepper, olive oil and cider vinegar in a bowl and toss and allow to sit overnight. Spread mayo on both sides of bread then place a layer of slaw and top with lobster then serve.
