2lb waxy potato (white potato) (sliced into ¼ inch half moon slices)
8oz julienne onions
4 fl oz clarified butter
½ tsp kosher salt
1 tsp ground black pepper
In a large sauté pan heat butter over medium high heat. Add potatoes to pan and cook turning for 4-5 minutes now add onions and cook until caramelized. Season with salt and pepper and serve.
