6 granny smith apples
2 tbl oil
1 shredded onion
9 oz shrimp
2 plum tomatoes diced
½ tsp salt
½ tsp black pepper
1 tbl butter
2 ½ c milk
Cut the tops off of each apple and reserve. Then scoop out the inside discarding the core. Heat oil in sauté pan add onions, shrimp, tomatoes, salt and pepper cook for 3-4 minutes over medium high heat. Preheat oven to 325 degrees. In a sauce pan melt butter over low heat and add flour stirring to make a blind roux. Add milk to the roux in the pan stirring constantly. Now add the shrimp mixture to this pan and combine. Fill the apples with this mixture put the reserved tops back on the apples and bake in greased pan for 25 minutes then serve.
