1 C ALL PURPOSE FLOUR SEASONED
1C EGG WASH (2 EGGS & ¼ C WATER)
½ C PECAN PIECES (CHOPPED)
½ C AL PURPOSE FLOUR
¼ C OIL
SEASON FLOUR WITH SALT & PEPPER ABOUT 1 TBL SALT AND 1 TBL PEPPER . SET UP YOUR BREADING STATION. FIRST PAN IS ALL PURPOSE FLOUR, SECOND PAN IS EGG WASH & THIRD PAN MIX 1/2C ALL PURPOSE FLOUR WITH ½ CUP CHOPPED PECAN PIECES. TAKE EACH MAHI MAHI STEAK AND DREDGE IN 1 PAN OF ALL PURPOSE FLOUR THEN EGG WASH AND THEN PECAN & FLOUR MIXTURE. HEAT OIL IN SAUTE PAN OVER MEDIUM HEAT AND PLACE FISH FILETS. THEN COOK FOR 2-3 MINUTES ON EACH SIDE. TRNASFER FISH TO 400 DEGREE OVEN AND CONTINUE TO COOK FOR 6-7 MINTUES OR UNTIL FISH IS DONE. FISH CAN BE TOPPED WIT ANCHO CHILI SAUCE (ANOTHER RECIPE BY CHEF LONNIE VARISCO)
