6 – 6oz Chicken breast boneless / skinless (diced)
1 lb rotini pasta (cook as directed)
1 tsp kosher salt
1 tsp black pepper
½ c bacon diced
1 tbl dry basil
2 tsp dry oregano
2 tbl unsalted butter
2 tbl garlic minced
½ c onion diced
¼ c carrot diced
¼ c celery diced
2 c sliced mushrooms
2 tbl fresh parsley minced
3 tbl olive oil
2/3 c white wine
1 ½ c chicken stock
1 c chopped tomatoes
1 c chopped artichoke
Add oil & butter to pot over medium heat. Add chicken breast, bacon, onion, garlic, basil, oregano, celery, salt & pepper. Cook for 3-4 minutes. Pour wine into pot and allow to reduce by half. Add chicken stock, parsley, mushrooms, artichoke and tomatoes to pot and simmer for 20-30 minutes. Serve over rotini.
