5 lb Pork Loin Cleaned
¼ c Dry Basil
¼ c Dry Oregano
¼ c Cumin
¼ c Paprika
¼ c Dry Thyme
2 Tbsp Kosher Salt
2 Tbsp Black Pepper
Chipotle Cane Sauce
3 c Pineapple Juice
1 can Chipolte Peppers (pureed)
2 c Cane Syrup
4 Poblano Peppers (sliced)
2 Onions (sliced)
3 tbsp Garlic (minced)
1 ½ tbsp Red Chili Flakes
1 tsp Salt
1 tsp Black Pepper
2 tbsp Oil
Coat the top of the pork loin with all of the above herbs and spices. Pre heat oven to 375 degrees. Place pork in roasting pan and cover , cook for 30-40 minutes. Allow pork to rest for 20 minutes before slicing. After cooled, slice pork loin and top with chipotle cane syrup and serve.
Chipolte Cane Sauce
In a sauce pan over medium high heat add oil, poblano peppers, onion, slat pepper and red chili flakes. Cook for 2-3 minutes. Add garlic and cook for 1-3 minutes. Add pineapple juice and chipotle puree and reduce by half. Add cane syrup and cook for 2-3 minutes, puree and serve.
