4 Roma tomatoes diced
6 garlic cloves minced
4 cups fish stock
2 tbl olive oil
1 red onion diced
2 lobster tails (8oz each)
1 c red chili sauce
½ c dark beer
1 bunch cilantro
1 tsp oregano minced
2 lb manilla clams
1 lb shrimp peeled
1 lb sea bass diced
½ lb sea scallops diced
8 corn tortillas
In a blender puree garlic with 1 cup fish stock. Heat oil in a pot over medium heat add onion cook for 6-7 minutes. Add tomatoes, garlic & stock mixture, lobster, chili sauce, beer, cilantro and oregano. Simmer for 5-6 minutes. Remove cilantro and now add clams, shrimp, scallops and fish to pot and cook for 4-5 minutes then add remaining stock and simmer for 6-7 minutes more. Serve in bowls with warm tortillas.
