2 lbs ground veal
1 tsp ground nutmeg
½ tsp kosher salt
½ tsp ground black pepper
2 c heavy cream
10 oz Italian bread crumbs
6 oz olive oil
2 c button mushrooms (sliced)
1 c red wine
1 tbl garlic (minced)
½ onion (diced)
2 c demi-glace
In a bowl mix ground veal, nutmeg, heavy cream, bread crumbs, salt and pepper. Form mix into 3 oz patties. Heat 3 oz of olive oil in sauté pan over medium high heat. Cook patties for 2-3 minutes per side then reserve warm. Add 3 oz of olive oil to pan. Now add mushrooms, garlic and onions. Cook for 1-2 minutes then add wine and reduce by half. Now add demi-glace and reduce by 1/3 then pour sauce over patties and serve.
