Yam and Chestnut Gratin

Ingredients

Vegetable Spray
8 fl oz skim milk
4 fl oz maple syrup
3 garlic cloves (minced)
Ancho chiles (chopped)
2 large yams
¼ tsp kosher salt
¼ tsp ground black pepper
3 leeks (cleaned white only sliced thin)
4 oz chestnuts (coarse chopped)
2 oz grated jack cheese

Instructions

 

Spray casserole dish with vegetable spray. In a sauce pan over medium high heat, add milk and maple syrup then heat to a simmer. Remove from heat and add garlic and chiles and steep for 30 minutes then puree in a blender. Peel and thinly slice the yams laying one-third of them in a layer in the casserole dish. Season with salt and pepper, ladle 1/3 of the milk mixture on top, then 1/3 chestnuts on top followed by 1/3 of the cheese. Repeat this process until everything is used. Cover with foil and place in a pre-heated 350 degree oven for 40 minutes.
