Black Forest Beef

Directions

  1. Pound the filet into scaloppini with the ham on top.
  2. Season and coat with the flour.
  3. Melt the clarified butter in a pan.
  4. Cook the beef and set aside.
  5. Sauté the onions and mushrooms in the remaining oil.
  6. Deglaze the pan with the brandy.
  7. Add the brown sauce and cream and reduce.

  • 2 oz(s). brown sauce
  • 1 Tbsp(s). butter, clarified
  • 2 Tbsp(s). flour, all-purpose
  • 2 oz(s). Nature's Best Dairy® Cream, Heavy
  • 4 oz(s). Peak Fresh Produce® Mushroom(s), sliced
  • 2 oz(s). Peak Fresh Produce® Onion(s), minced
  • 1 Tbsp(s). Peak Fresh Produce® Onion(s), Green, chopped
  • 2 slices Ridgecrest® Ham, Black Forest Traditional
  • salt and pepper, to taste
