Braveheart® Chili Crusted Strip Loin

Directions

  1. Mix cumin, chili powder, salt, and pepper.
  2. Spray both side of strip loin then coat with chili powder blend. For best flavor let coated strips rest for 1-2 hours to overnight wrapped under refrigeration.
  3. Cook strips under broiler, on griddle or grill to desired internal degree of doneness.
  4. Place strip on small cutting board. Sprinkle with Cotija cheese then pipe with a star tip the two compound butters onto board or place refrigerate butter and cut into circles and place in ramekin and serve.

  • 1 14 oz. Braveheart NY Strip Steak, each
  • Brilliance Pan Spray
  • 1 tbsp Magellan® Chili Powder
  • 1 tsp Magellan® Cumin, ground
  • 1/8 tsp sea salt
  • 1/8 tsp Magellan® Black Pepper, ground
  • 1 tsp Contigo Cotija Cheese
  • 1 1/2 oz. Contigo® Red Habanero Compound Butter, (see recipe below)
  • 1 1/2 oz. Contigo® Green Habanero Compound Butter, (see recipe below)

Contigo® Red Habanero Compound Butter

Directions

  1. With butter at room temperature fold in all ingredients.
  2. Transfer to a piping bag with a star tip.
  3. Pipe butter onto sheet pan lined with parchment paper then refrigerate for service.

  • 3 tbsp Contigo® red habanero hot sauce
  • 1 tbsp Peak Fresh Produce® Cilantro, Fresh, minced

  • 1/4 tsp sea salt
  • 2 tbsp sesame seeds, black

Contigo® Green Habanero Compound Butter

Directions
