Goat Cheese Bruschetta

Directions

  1. Preheat oven to 325° F. Arrange bread slices on baking sheet.
  2. Brush olive oil over both sides of bread.
  3. Bake bread until golden, about 6 minutes per side.
  4. Remove toasts from oven.
  5. Rub cut sides of garlic over toasts.
  6. Combine seeded plum tomatoes and fresh lemon juice in medium bowl.
  7. Season with generous amount of salt and pepper.
  8. Toss tomatoes to combine.
  9. Toasts and tomatoes can be prepared 1 hour ahead.
  10. Cover separately and keep at room temperature.
  11. Preheat oven to 350°F.
  12. Spread goat cheese over toasts; arrange on baking sheet.
  13. Mound tomatoes on toasts, dividing equally.
  14. Bake until heated through, about 8 minutes.
  15. Transfer bruschetta to platter.

  • 12 Heritage Ovens® Bread, French, 1/2-inch-thick slices
  • 4 oz. Nature's Best Dairy® Cheese, Goat
  • 3 Tbsps. Piancone® Oil, Olive
  • 6 tomato(es), plum, seeded, chopped
