Jamaican Jerk Tuna Tacos

Directions

  1. Coat tuna with jerk seasoning. Heat oil over high heat in sauté pan. Add tuna and cook for 1-2 minutes per side. Dice tuna into for equal portions. 
  2. In each tortilla, add portion of slaw then tuna. Top with mango salsa and drizzle with chipotle avocado, then serve. 

Ingredients

  • 2 tbsp Piancone® Oil, Olive
  • 4 Contigo® Tortilla(s), Flour 6-inch
  • 2 tuna, steak(s)

Jamaican Jerk Seasoning

Directions

Mix all ingredients together and store in an airtight container.

Ingredients

  • 1 tbsp allspice
  • 1/2 tsp cayenne pepper
  • 2 tsp chili flakes
  • 1 tbsp cinnamon, ground
  • 2 tbsp garlic, powder
  • 1 tbsp nutmeg
  • 2 tbsp onion powder
  • 1 cup paprika 
  • 1 tbsp parsley, flakes
  • 4 tsp salt, kosher
  • 1 tbsp thyme, dry

Jicama and Sweet Pepper Slaw

Directions

  1. Mix all ingredients together in a bowl and allow to rest overnight in the refrigerator for best flavor results.

  • 1 tbsp honey
  • 1 cup jicama(s), julienned
  • 1 lime(s), juice of
  • 4 tbsp Piancone® Oil, Olive, Extra Virgin
  • 1 tsp pepper, black
  • 1 tbsp Peak Fresh Produce® Cilantro, Fresh, minced
  • 1 Peak Fresh Produce® Pepper(s), Green Bell, julienned
  • 1 Peak Fresh Produce® Pepper(s), Red Bell, julienned
  • 1 Peak Fresh Produce® Pepper(s), Yellow, julienned
  • 1/2 tsp salt, kosher
  • 2 tbsp vinegar, red wine

Chipotle Avocado Puree

Directions

Puree all ingredients together in food processor. Puree will last one day under refrigeration.

  • 1/2 lime(s), juiced

Mango Salsa

Directions

Combine all ingredients in mixing bowl, toss well and check for seasoning.
