Select Recipe Fries with Dipping Sauces

Directions

Prepare fries according to package directions.

Ingredients

  • 2 cups Asian Pride® Sweet Chili Sauce
  • 5 lbs Simplot® Select Recipe Fries

Garlic Aioli

Directions

  1. Smash garlic into a paste with a pinch of salt using a large knife. Place into blender and add egg yolks, lemon juice, and mustard into blender and puree.
  2. Add Olive Oil into yolk mixture slowly, until all oil is incorporated.
  3. Adjust taste with salt and pepper.

Ingredients

  • 3 tbsp Ascend® Juice, Lemon
  • 2 tsp mustard, dijon
  • 4 Nature's Best Dairy® Egg(s), yolks only
  • 8 cloves Peak Fresh Produce® Garlic, mashed
  • 1 cup Piancone® Oil, Olive
  • 1 tsp salt and pepper, to taste

Blueberry Ketchup

Directions

  1. Heat oil over medium heat in a medium sauce until shimmering.
  2. Add shallot and cook until softened, but not browned, about 4 minutes. Add in ginger and garlic and cook until fragrant, about 30 seconds. Add in blueberries, vinegar, brown sugar, and salt and bring to a boil.
  3. Reduce heat and simmer until thickened, about 30-45 minutes.
  4. Let cool to room temperature

  • 1/4 cup West Creek® Sugar, Brown
  • 1/4 cup West Creek® Vinegar, Red Wine
