Roma® Neapolitan-Style Premio ’00’ Fine Ground Flour is our version of this finely milled classic, ideal for high-heat ovens. It creates a soft, supple dough with great mixing tolerance, excellent water absorption, and works well with long fermentation. Milled in North America eliminates imported pizza flours’ supply chain and cost challenges.
At 12% protein and 14% moisture, Roma® Neapolitan- Style Premio’ 00’ Fine Ground Flour is ideal for quick cooking times and an airer crust. This flour is specifically designed for thin crusts and flatbreads.
