Lebanese Garlic Dip


  1. Boil potatoes until soft; mash and cool.
  2. Combine with garlic, lemon juice and salt in food processor bowl and pulse until coarsely chopped. Add canola oil and process until fully incorporated and smooth.
  3. Refrigerate for 1 hour to allow flavors to develop.


  • 1/3 cup Ascend® Juice, Lemon
  • 12-14 Peak Fresh Produce® Garlic, Clove(s), peeled
  • 3 cups Peak Fresh Produce® Potato(es), Russet, peeled
  • 1/2 cup West Creek® Oil, Canola
  • 1 1/2 tsp West Creek® Salt
