Artichoke Casserole

Directions

  1. Arrange artichokes in 2 steam table pans.
  2. Heat the remaining ingredients together and pour over the artichokes.
  3. Place in a 350º oven for 15 minutes and then hold warm.
  4. Just before serving, sprinkle coarse chopped pecans (optional) over artichokes.

Ingredients

  • 1/2 tsp. garlic, powder
  • 2 tsp. oregano, dried
  • 3 tsp. Peak Fresh Produce® Lemon(s), zest
  • 1 1/2 cup Peak Fresh Produce® Onion(s), minced
  • 2 cans Roma® Artichoke Hearts, Quartered
  • 2 tbsp salt
  • 2 12 oz. cans vegetable stock
  • 1 cup West Creek® Lemon Juice
  • 1 1/2 sticks West Creek® Margarine
