Directions
- Place the hot water into a bowl and add the potatoes while whisking. Allow to refresh for 1 minute and then fluff the potatoes.
- For assembly, place the mashed potatoes into a bowl, top with three ounces of the country gravy, on top of the gravy, place 3 ounces of the sausage crumbles.
- Place a biscuit to one side of the bowl and finish with a sprinkling of Tajin and scallions.

- 1 gal. water, hot
- 1 gal. gravy, country
- 6 1/2 lbs. sausage, crumbles, cooked
- 1 oz. Tajin
- 1 lb. scallions, chopped
- 36 biscuits, prepared
