Pozole Rojo Con Pollo

Directions

  1. Sauté diced chicken thighs until lightly browned; remove from pan.
  2. Sauté onion and bell pepper in same pan until translucent. Add browned chicken thighs back into pan and mix with onion and pepper. Add hominy and stir together.
  3. Add Custom Culinary® True Foundations® Latin-Style Citrus Chili Sauce. Bring to a boil while stirring. Reduce to a simmer and cook for 30 to 40 minutes.
  4. Serve in a shallow bowl and garnish with cabbage, radish, cilantro and scallions.

  • 2 ea pepper(s), red bell, medium dice
  • 1 #10 can Hominy, white
  • 8 ea Custom Culinary® True Foundations® Latin-Style Citrus Chili Sauce, 2# bags
  • cabbage, as needed, shredded for garnish
  • radish(es), as needed, sliced for garnish
  • cilantro, fresh, as needed, chopped for garnish
  • Scallions, as needed, chopped for garnish
