Enriched flour milled from hard wheat, these two flours are high in protein and possess superior dough extensibility, and they now are available unbleached and without potassium bromate for a “cleaner” label flour.
 
Assoluti! Premium High Gluten Unbleached and Unbromated Flour is a premium flour with a high gluten level. This premium product yields a very tolerant, strong dough capable of making a thin, crisp crust with a nice bite.

  • Flour Grade: Premium High Gluten
  • Protein Grade: 14%*
  • Applications: Thin-crust pizzas, bagels, Kaiser rolls and hearth breads.

Luigi High Gluten Enriched Unbleached Unbromated Flour has a slightly lower protein level and is ideal for thicker crusts. Some operators will prefer this flour because it allows for thicker-style pizza crusts as well as specialty breads.

  • Applications: Thick-crust pizzas, Kaiser rolls, hearth breads, specialty and variety breads.
