Bay Winds Chilean Sea Bass is wild-caught in the coldest, cleanest waters of the Antarctic and flash-frozen at sea, preserving its one-of-a-kind flavor and texture. Performance Foodservice facilities maintain both product quality and excellence in service, utilizing an impeccable HACCP program and Grade-A sanitary standards. To achieve accreditation, our plants are annually audited by a third-party food safety inspection, conducted by SGS. All of our Chilean sea bass is skinless, boneless, and laser-cut on state-of-the-art machinery to ensure consistency in size and shape.
