Due to the significant marbling within the muscle of our Allegiance® Pork, the raw products lends itself to a combination of wet and dry aging. The first round of aging is wet aging, where the pork cuts are stored in a controlled environment. This step helps to further tenderize the meat and develops exceptional flavor.
After wet-aging, the pork cuts are transferred to a humidity-controlled dry-age room. This room is designed to maintain specific temperature and humidity levels, which contribute to the aging process. The humidity helps the fibers and muscles within the pork to age thus enhancing the flavor and overall quality of the meat. The pork cuts are left in the dry-age room for 14 days. During this time, the meat loses moisture, which results in a concentration of flavors.
Once the dry aging period is complete, each pork chop is hand-cut to perfection - ensuring precise portioning and presentation.
