Alfredo Primavera Sauce


  1. Heat oil in large skillet over medium high heat.
  2. Saute onions for about 2 minutes or until soft, but not brown.
  3. Add mushrooms and peppers.
  4. Heat about 2 minutes or until mushrooms are soft and peppers are still slightly crisp.
  5. Add yogurt, seasonings and parmesan cheese to skillet.
  6. Heat over low heat, stirring constantly, until cheese is melted and sauce is smooth. Do not boil or sauce will curdle.
  7. Remove from heat and serve. Garnish with sliced scallions, if desired.


  • 1 Tbsp. oregano
  • 1 Tbsp. garlic, powder
