            Allegiance Chop Stuffed with Goat Cheese
            
                
                    Directions
                    
    - Make a small insertion with a boning knife in the side of the chop. Work the knife to create a pocket in the meat without creating a big opening. 
- Combine the cheese and bread crumbs. Season with salt and pepper. 
- Fill the pocket created with the cheese mixture. Season the chop and sear both side in a pan. Finish in the oven. 
- Deglaze the pan with the bourbon. Add the fig preserves and cook down to a glaze. Pour over the finished chop

                                    - 1 pork, chop(s)
- 2 oz bourbon
- 2 tbsp cheese crumbles, goat 
- 3 oz preserves, fig
- 2 tbsp panko breadcrumbs

    - Boil the sweet potato until soft. 
- Mash with the butter, salt, and pepper, Stir in the marmalade and serve.
