Arugula Salad with Goat Cheese


  1. Place baby arugula in salad bowl and sprinkle red onion over mixture.
  2. Top with bacon, oranges, cashews and goat cheese.
  3. Add tomatoes around the edge of the bowl.
  4. Drizzle the dressing over salad and serve.


  • 2 oz. cashews
  • 4 oz. Ken's® Honey Lime Vinaigrette
  • 2 oz. Mandarin Oranges
  • 3 oz. Nature's Best Dairy® Cheese, Goat
  • 4 oz. Peak Fresh Produce® Arugula
  • 2 oz. Peak Fresh Produce® Onion(s), Red, sliced
  • 3 each Peak Fresh Produce® Tomato(es), Cherry, sliced
  • 2 oz. Ridgecrest® Bacon, Applewood Slice(s), diced
