Blueberry Ketchup


  1. Heat oil over medium heat in a medium sauce until shimmering.
  2. Add shallot and cook until softened, but not browned, about 4 minutes. Add in ginger and garlic and cook until fragrant, about 30 seconds. Add in blueberries, vinegar, brown sugar, and salt and bring to a boil.
  3. Reduce heat and simmer until thickened, about 30-45 minutes.
  4. Let cool to room temperature


  • 1 tbsp Brilliance® Premium Oils Canola Oil, Blend
  • 1 tsp ginger, fresh, minced
  • 1 Peak Fresh Produce® Garlic, Clove(s), medium
  • 1 tsp salt and pepper, to taste
  • 2 cups West Creek® Blueberries, Frozen
  • 1/4 cup West Creek® Sugar, Brown
  • 1/4 cup West Creek® Vinegar, Red Wine
