Braised Lamb Shanks

Directions

  1. Sprinkle shanks with salt and pepper.
  2. Heat oil in heavy braising pan over medium-high heat. Sear shanks until brown on all sides, about 5 minutes.
  3. Add onions, carrots and garlic to pan and saute, about 5 minutes. Deglaze with wine, add tomatoes and stock(or water).
  4. Add whole sprigs of rosemary and thyme.
  5. Cover with (oven safe) plastic wrap and foil. Braise in a 325 degree oven 2.5 to 3 hrs.
  6. Remove shanks and herbs.

  • 2 Peak Fresh Produce® Onion(s), Yellow, chopped
  • 2 bu. Peak Fresh Produce® Thyme, Fresh
  • 1 qt. Peak Fresh Produce® Tomato(es), whole, peeled
  • 2 tbsp. Roma® Oil, Olive
  • 3 rosemary, bunch(es), fresh
  • salt and pepper, to taste
  • 3 cups water
  • 1 bottle wine, red, 750 mL
