Toast the buns and spread with aioli on top and bottom.
While grilling the beef patties, after first flip place 1 slice of pepper jack cheese on top of 1 patty and 1 slice of cheddar cheese on top of the other patty. On top of the pepper jack cheese patty, add the grilled onion, green chili chorizo blend and then top with the cheddar patty and remove to bottom bun.
Place shredded lettuce, sliced tomato and sliced avocado on top of burger patties. Top with bun and serve.
