Heat oven to 400°. Place a baking cooling rack on top of a sheet pan. Spray wings with pan coating then sprinkle with salt and black pepper toss to coat. Place wings on wire rack then place pan in oven and bake for 7-8 minutes then turn and bake an additional 7-8 minutes. Make sure internal temperature of chicken reaches 165°. Remove from oven and hold warm for plating.
In a saucepan over medium heat add butter, honey and Calabrian chili paste. Stir warm until butter has melted. Remove from heat.
In a bowl add four ounces of room temperature butter and fold in pesto, salt, and lemon zest.
For the gremolata: Heat a sauté pan over low medium heat. Add extra virgin olive oil and Italian breadcrumbs. Toast stirring for 1-2 minutes then remove from heat and fold in salt and lemon juice. Reserve for plating.
For the dilly blue cheese dip: In a bowl add blue cheese dressing, lemon juice, dill, and black pepper. Stir to combine and hold refrigerated for plating.
5. In a bowl add wings and Calabrian honey butter sauce then toss to coat.
Place the wings on a warm entrée plate.
Warm the pesto butter in a saucepan over medium heat then drizzle over the wings followed by gremolata.
Serve with a side of the dilly blue cheese dip and charred lemon halves.
