Chicken Quesadilla with Chipotle Mayonnaise


  1. Fill tortilla with cheeses, chicken, onions, and peppers.
  2. Cook in an oven or on a flat-top grill on both sides until golden brown.
  3. Cut and plate. Drizzle with Ken’s Chipotle Mayonnaise and top with scallions.


  • 1/4 cup Contigo® Cheese, Pepper Jack
  • 1 Contigo® Tortilla(s), Flour
  • 1/4 cup Ken's® Chipotle Mayonnaise
  • 1/4 cup onion(s), caramelized
  • 1 tbsp Peak Fresh Produce® Scallion(s), chopped
  • 1/4 cup Roma® Cheese, Mozzarella
  • 3 oz West Creek® Chicken, Breast(s), cooked, sliced
