Crispy Duck, Pear and Gorgonzola Salad


  1. Tear the artisan lettuce into small pieces and place into a bowl.
  2. Core the pears and slice into thin strips. Combine the cream, vinegar and Gorgonzola then season with salt and pepper. Add pear slices to this mixture.
  3. Divide the lettuce onto six plates. Spoon a portion of the pear and Gorgonzola mixture on top then garnish with walnuts and serve. Place the sliced duck breast on top of salad and garnish with tomatoes.


  • 3 oz. cheese crumbles, gorgonzola
  • 3 duck, breast(s), cooked & sliced thin
  • 2 heads lettuce, artisan
  • 4 oz. Nature's Best Dairy® Cream, Heavy, 40% Butter Fat
  • 2 pear(s)
  • 1/2 cup tomato(es), grape
  • 2 oz. vinegar, rice wine
  • 1 oz. walnuts, toasted
