Crispy Duck, Pear and Gorgonzola Salad
Directions
- Tear the artisan lettuce into small pieces and place into a bowl.
- Core the pears and slice into thin strips. Combine the cream, vinegar and Gorgonzola then season with salt and pepper. Add pear slices to this mixture.
- Divide the lettuce onto six plates. Spoon a portion of the pear and Gorgonzola mixture on top then garnish with walnuts and serve. Place the sliced duck breast on top of salad and garnish with tomatoes.

- 2 heads lettuce, artisan
