Flat Iron Steak and Maple Bacon Jam

Directions

  1. Remove the pre-portioned Double Red Provisions flat iron steak from the box and place on a tray under refrigerator for 12-24 hours until thawed. 
  2. Place the steak on a 350° grill and cook to desired temperature. Allow the steak to rest for 3-5 minutes before slicing. This will allow the juices to set in the steak.
  3. The flat iron can now be served many different ways: top it with our maple bacon jam recipe or blue cheese butter or garlic herb butter for enhanced flavor. Slice it and fan it over a salad for a steak salad entrée. Slice it and use it in steak tacos, burritos or fajitas. It can also be sliced raw and used in stir fry. Drizzle the flat iron with balsamic glaze for a center of the plate application. The marbling of the steak gives it supreme juiciness, this feature makes it perfect for buffet lines, catering, banquets and other scenarios where you may need to grill ahead of time.

Maple Bacon Jam

Directions

  1. Place the bacon in the freezer and freeze it 75% of the way. It will be much easier to dice that way. Fine dice the bacon and place it in a larger skillet on medium flame.
  2. Render the bacon until nearly crispy. Drain half the fat. Add the onion, garlic and thyme. Cook until the onions are translucent.
  3. Turn down the flame and add the syrup. Cook on low while stirring frequently until you have a thick, gooey mess. Add the cracked pepper to taste. Hold at room temp. for topping on Flat Iron steaks.
  4. Grill the Double Red Provisions flat iron steak to desire doneness. Approximately 4 minutes per side. When done, allow to sit for 3-4 minutes so the juices set. Slice on a bias against the grain, top with maple bacon jam and serve with your choice of sides.
