Gnocchi with Edamame and Vegetables


  1. Prepare gnocchi according to the package directions.
  2. In a large frying pan on medium-high heat add butter and the sage; sauté until fragrant, about 3 minutes.
  3. Add the gnocchi and the halved Brussels sprouts; sauté until golden brown, approximately 15 minutes. Add carrots and the edamame to the gnocchi and Brussels sprouts. Gently stir to mix, cover, and cook for 10 minutes, or until heated through.


  • 12 oz. edamame, shelled, blanched and drained
  • 2 oz. Nature's Best Dairy® Butter
  • 12 oz. Peak Fresh Produce® Brussels Sprouts, blanched
  • 12 oz. Peak Fresh Produce® Carrot(s), chopped
  • 1/2 tsp. pepper, black
  • 2 Tbsps. Piancone® Oil, Olive
  • 16 oz. Roma® Gnocchi
  • 3 Tbsps. sage, fresh, shredded
  • 1/2 tsp. salt
