Grilled Vegetable and Hummus Wrap


  1. Drizzle squash and peppers with olive oil and season with salt and pepper. Grill vegetables, turning frequently until outer skins of peppers are charred and squash is almost cooked through. Remove from grill and allow to cool.
  2. Peel roasted peppers and remove stem and seeds. Slice into thin strips and set aside. Slice squash thinly on the diagonal.
  3. Spread each wrap with 2 heaping tbsp. of Sabra® Roasted Garlic Hummus. Sprinkle evenly with chopped spinach leaves. Place half of the grilled vegetables on each pita over Sabra® Roasted Garlic Hummus and spinach in center of wraps. Roll one end in and tuck both sides while rolling, to look like a burrito. Squeeze as you roll to keep shape. Secure with toothpicks and slice in half on the diagonal.

  • 1/2 cup Peak Fresh Produce® Spinach, shredded
  • 1 medium Peak Fresh Produce® Yellow Squash, cut in half lengthwise
  • 1 medium Peak Fresh Produce® Zucchini, cut in half lengthwise
  • 1 Tbsp. Piancone® Oil, Olive, Extra Virgin
  • 4 Tbsp. Sabra® Roasted Garlic Hummus
  • -- -- salt and pepper, to taste
  • 2 8-inch wrap(s), herbed or spinach flavored
