Harvest Pork Salad


  1. Pour olive oil and whip into the chipotle base. Rub tenderloin and roast in the oven, to 155° internal temperature.
  2. Plate lettuce, top with onion, apples, pineapple and cucumbers.
  3. Rough cut pork, place on the salad, and drizzle with dressing.


  • 4 oz. Allegiance® Pork. Tenderloin
  • 2 oz. apple(s), Red Delicious, diced
  • 1/2 tsp. chipotle base
  • 3 oz. Peak Fresh Produce® Cucumber(s)
  • 3 oz. Peak Fresh Produce® Lettuce, Arcadian Harvest Blend
  • 1 oz. Peak Fresh Produce® Onion(s), Red, diced
  • 3 oz. Piancone® Dressing, Chianti Basil Vinaigrette
  • 1 oz. Piancone® Oil, Olive, Extra Virgin
  • 2 oz. pineapple(s), whole, diced
