Jicama Cole Slaw


  1. Combine all ingredients in a large bowl and mix thoroughly. Season with salt and pepper to taste. More or less Classic Cole Slaw Dressing can be used depending on the consistency desired.
  2. Refrigerate. Serve as an alternative to traditional coleslaws for sandwich and seafood dishes.


  • 1/2 cup corn, kernels, (whole kernel)
  • 1 1/2 lb jicama(s), (peeled, julienned)
  • 1/2 cup Peak Fresh Produce® Cilantro, Fresh, (finely chopped)
  • 1 tsp pepper, serrano, ground
  • 1 pepper(s), red bell, (julienned)
  • 1 pepper(s), yellow bell, (julienned)
  • 1/4 cup salsa
  • - to taste salt and pepper
  • 1 cup Village Garden® Classic Coleslaw Dressing
