Lemon Champagne Veggie Power Blend


  1. In Large Chilled Mixing Bowl, Combine Parsley, Lemon Zest, Honey and Vinegar.
  2. Whisk to dissolve Honey. Slowly add Olive Oil while whisking to combine. Fold in Veggie Power Blend in to Dressing until evenly coated.
  3. Add Blue Cheese and Raisins. Adjust Seasoning with Salt.
  4. Transfer to Chilled Entrée or Pasta Plate.


  • 1 cup Roma Blue Cheese Crumble
  • 1/2 cup vinegar, champagne
  • 1 cup Piancone® Oil, Olive, Extra Virgin
  • 1 cup raisin(s), golden
  • 1/2 cup West Creek® Honey
  • 4 tbsp lemon zest
  • 1/4 cup Peak Fresh Produce Parsley, chopped
  • salt, to taste
  • 2 lb Veggie Power Blend
