Lobster and Grapefruit Salad


  1. Remove lobster from the package and drain well.
  2. Peel grapefruit and cut into Supremes.
  3. Peel and thin slice avocado. Season the lobster and grapefruit with lemon, oil, salt and pepper, green onions and parsley. Place on sliced avocado that has been arranged on a chilled plate.

  • Roma black pepper , to taste
  • 2 tbsp oil, olive, extra virgin
  • 2 Peak Fresh Produce® Grapefruit, large
  • 2 Peak Fresh Produce® Onion(s), green
  • Kosher salt, to taste
  • lemon juice
  • 4 tbsp Peak Fresh Produce® Parsley, Fresh Italian Flat-Leaf
