Parmesan Pork Tenders


  1. Fill a shallow bowl with flour.
  2. Whip eggs and milk together in a second shallow bowl.
  3. In a third bowl mix panko bread crumbs & Parmesan.
  4. Coat pork in flour, then egg mixture, then bread crumbs & set aside.
  5. Slice onion, zucchini and squash length wise. Heat half of olive oil in sauté pan. Add onion, zucchini, squash and chopped garlic, heat until tender.
  6. Heat remaining olive oil in another sauté pan. Pan fry the prepared pork until golden brown. Arrange vegetables on a plate. Fan pork across part of the vegetables, garnish with parsley.

  • 2 each egg(s)
  • 2 Tbsps. flour, all-purpose
  • 1/4 cup Nature's Best Dairy® Milk
  • 2 Tbsps. panko breadcrumbs
  • 1 pinch Peak Fresh Produce® Garlic, Clove(s)
  • 3 oz. Peak Fresh Produce® Onion(s), Yellow Jumbo
  • 2 slices Peak Fresh Produce® Yellow Squash
  • 3 slices Peak Fresh Produce® Zucchini
  • 2 oz. Piancone® Oil, Olive, Extra Virgin
  • 1 tsp. Roma® Cheese Grated, Parmesan
